Using a stand mixer or hand mixture, whisk together cold heavy whipping cream, powdered sugar, vanilla extract, and 1 shot of chilled espresso to stiff peaks.
To the mixture, add the mascarpone cheese and folder it in gently.
In a cup, combine the remaining shot of expresso and coffee liqueur.
In a small baking dish, place 6 ladyfinger cookies on the bottom brush on the coffee liqueur mixture onto the cookies using a silicone brush or pour it using a spoon. Be careful not to oversoak as it can make the cookies soggy.
Add on half of the whipped cream mixture and spread it out evenly over the layer of ladyfinger cookies.
Add a second layer of ladyfinger cookies on top of the whipped cream mixture, and brush with coffee liqueur mixture as in step 4.
Add the remainder of the whipped cream mixture and spread it out evenly over the top layer of ladyfinger cookies.
Using a tea strainer, sprinkle the cocoa powder evenly to cover the top.
Chill the Tiramisu in the refrigerator for 3-4 hours or overnight to allow it to set properly.
