Cook the Noodles according to packet instructions. Reserve 1/4 cup for the sauce, drain, rinse lightly with water and set aside.
In a large mixing bowl, combine your peanut butter, soy sauce, dark soy sauce, black vinegar, brown sugar, chili flakes (or gochugaru), chili oil, sesame oil and hot water into a bowl. Whisk until evenly combined.
Combine the cooked noodles and sauce and mix until noodles are evenly coated.
Serve with a garnish of julienned cucumber, sesame seeds, roasted peanuts, green onions and chili oil. Enjoy!
