Ingredients
  

  • 4 Cups Brussels Sprouts shaved
  • 2 Apple diced
  • ½ Cup Roasted Pumpkin Seeds
  • ¼ Cup Pistachios chopped
  • ½ Cup Dried Cranberries
  • ½ Cup Sharp Cheddar Cheese shredded
  • ½ Cup Pomegranate seeds

Apple Cider Dijon Vinaigrette

Instructions
 

  • Combine all the ingredients for the Apple Cider Dijon vinaigrette and set aside.
  • In a salad bowl, massage the shaved brussels sprouts with a little bit of extra virgin olive oil and a pinch of salt. Set aside for 10 minutes.
  • Add all other ingredients to the bowl with brussels sprouts.
  • Pour the Apple Cider Dijon Vinaigrette over the ingredients in the bowl and toss.
  • Serve in a bowl, and top with dried cranberries, shredded sharp cheddar cheese, pistachios, and roasted pumpkin seeds.
  • Enjoy!

Notes
