Mushroom Bok Choy Stir Fry is a savory, nutritious, and easy-to-make dish that features tender mushrooms and crisp bok choy in a deliciously balanced sauce. This vegan stir-fry is perfect for busy weeknights and pairs wonderfully with rice or noodles. In a pan or wok over medium heat, add 1/4 cup of water, and add the chopped Bok Choy and steam for 2-3 minutes. Remove and step aside.
In a clean pan or wok over medium heat, add 2 tbsp cooking oil and add all mushrooms and saute until firm and browned. Add a tsp of soy sauce to season the mushrooms as they cook.
Once the mushrooms are cooked, push them to the sides making space in the center. Add a little more cooking oil, along with garlic, ginger, scallion, and dried red chilies. Stir and cook until fragrant.
Add the steamed bok choy, and stir to combine.
Pour in the stir fry sauce and stir to coat all ingredients.
Add in the cornstarch slurry and stir to allow the sauce to thicken and reduce.
Garnish with scallion greens and remove from heat.
Serve and enjoy!

Mushroom Variety: Feel free to use any mushrooms you like, such as button mushrooms, shiitake, or a combination for a richer flavor.
