Ingredients
  

  • 30 oz Chickpeas drained and rinsed
  • 1 English cucumber diced
  • cup Red Onion diced
  • 8 oz Feta Cheese crumbled
  • ½ cup fresh parsley chopped
  • ¼ cup Fresh Mint
  • Lemon Zest 1 lemon
  • 2 Tbsp Lemon Juice
  • ¼ cup extra virgin olive oil
  • ¼ tsp black pepper
  • ¼ tsp salt

Instructions
 

  • Strain the 2 cans of Chickpeas of the liquid.
  • Add all the ingredients into a large salad bowl and gently combine.
