  • Set the Instant Pot to sauté and add ghee. Once the ghee is heated, add cloves, cinnamon stick and Cracked Wheat.
  • Stir and start roasting. In the beginning, Cracked Wheat will absorb all the ghee.
  • On another stove or in the electric kettle, heat the water until it starts simmering. (or use a microwave)
  • Keep stirring constantly and continue roasting until it becomes aromatic and light brown in color (for about 5-7 minutes). As it gets roasted, you will get a nice toasted aroma and also notice that ghee starts to ooze out and starts bubbling.
  • Now add hot water slowly, being careful not to splatter.
  • Close the lid, and use the "Pressure Cook" setting on High Pressure and Normal Heat for 8 minutes. Set the whistle to "Sealing". Cook until the seal release, and pressure valve drops.
  • Open the lid, and add sugar. Mix until the sugar melts and become mixture becomes runny again.
  • Add ground Nutmeg.
  • Add cardamom and dried nuts (almonds, cashews, etc)
  • Serve Lapsi hot or warm.

Notes

  1. Roast the broken wheat on low heat to ensure it doesn’t burn and develops a nutty flavor.
  2. Adjust the sweetness by adding more or less jaggery, depending on your preference.
  3. Use a heavy-bottomed pan to prevent the Lapsi from sticking or burning.
  4. Store leftovers in an airtight container in the refrigerator and reheat with a splash of water or milk.
