Cut the bread into cubes of your desired size, put them on a baking sheet, and dry them in the oven on "warm" or around 175 F. This could be done overnight, but generally takes 2-3 hours.
Remove the bread from the oven, and transfer it to a large mixing bowl. Then add the Onion and Celery mixture.
Preheat the oven to 350 degrees F.
In a pan over medium low heat, add butter and allow it to melt. Then add half of the chopped Sage and Thyme, and allow them to infuse the melted butter. Then add the chopped Onions and Celery, 1 tsp salt and black pepper, and sauté for 1-2 minutes, until the rawness is eliminated.
Slowly pour 1 cup of Vegetable broth/stock to the mixing bowl, and mix until the liquid is absorbed. Then add the second cup of Vegetable broth/stock and mix until that is absorbed. Add salt and Black pepper to taste.
Transfer the stuffing mixture to a baking dish, and bake at 350 Degrees F for 25-30 minutes.

Notes
For a crispier texture, bake your stuffing uncovered. If you prefer a more moist consistency, cover with foil during baking.
Make sure to dry out your bread cubes ahead of time to prevent a soggy stuffing.
Taste your mixture before baking to adjust the seasoning as needed.
