- In a clean pan or wok over medium heat, add 2 tbsp cooking oil and add all mushrooms and saute until firm and browned. Add a tsp of soy sauce to season the mushrooms as they cook.
- Once the mushrooms are cooked, push them to the sides making space in the center. Add a little more cooking oil, along with garlic, ginger, scallion, and dried red chilies. Stir and cook until fragrant.
- Add the steamed Bok Choy, and stir to combine.
- Pour in the stir fry sauce and stir to coat all ingredients.
- Add in the cornstarch slurry and stir to allow the sauce to thicken and reduce.
- Garnish with scallion greens and remove from heat.

Ingredients
- 4 Cups Bok Choy chopped
- 400 g Button Mushrooms quartered
- 2 Tbsp Garlic minced
- 2 Tbsp Ginger grated
- 2 Green Onions whites, and green parts
- 3 Dried Chilies
- 2 Tbsp Cooking Oil
Stir Fry Sauce:
- 2 Tbsp Water
- 1 Tsp Sugar
- 2 Tbsp Soy Sauce
- ½ Tsp Black Pepper ground
- 1 Tsp Sesame Oil roasted
- 1 Tbsp Vegan Oyster Sauce
