How To Make Creamy Mushroom Risotto

- To the onions, add the diced mushrooms and cook for 3-4 minutes. Then add garlic and thyme and cook for 1-2 minutes. Being careful not to burn the garlic.
- Add White Wine to deglaze the pan. Stir and cook for 30-60 seconds to reduce.
- Add the Arborio rice, and stir for 30-60 seconds.
- Add 1 cup vegetable stock, and stir until the stock is absorbed. Stir continuously to allow the starch to release and thicken.
- Keep adding vegetable stock 1 cup at a time, stirring and allowing the rice to absorb the liquid until all liquid is absorbed and rice is al dente.
- To finish the risotto, turn off the heat and add 2 tbsp of butter, and 1/2 cup of grated parmesan cheese. Stir vigorously to allow the butter and parmesan cheese to melt and emulsify to create a fluffy consistency.
- Garnish with chopped parsley and serve!
